My Grandma’s Roast Chicken

This recipe is super easy to make with only a handful of ingredients. Serve with Pea Pulao and Cucumber Raita, or with garlic bread for a light meal.

My grandma’s recipe with just 4 simple ingredients: fried onions, salt, ginger and garlic paste, yogurt. My fav part though are the potatoes as they soak up all the delicious chicken flavour. 😋

Ingredients

  • 1 chicken (whole or cut in pieces)

  • 2 tsp salt

  • 2 tsp ginger & garlic paste

  • 1 cup yogurt

  • 1 medium onion (thinly sliced)

  • 4 potatoes

  • ½ cup oil

Directions

  • Beat yogurt and add garlic-ginger paste and salt in it.
  • Marinate chicken in yogurt mixture for at least 2 hours.
  • Slice the onion thinly.
  • Cut each potato into large pieces; so that each piece is roughly the same size. Season with salt.
  • In hot oil fry the onions till golden brown.
  • In the same oil add the marinated chicken and potatoes.
  • Stir fry on high flame for a minute, or until the chicken changes colour.
  • Reduce flame to medium and cover and cook for approximately an hour. Flip the chicken and potatoes every 15-20 minutes to cook evenly.
  • When all water has dried up, continue to cook uncovered so that the chicken starts to brown/roast slightly. Turn off heat and serve hot.

Notes

  • You can use whole chicken or pieces for this recipe. Whole chicken is more presentable, but I usually cook pieces because it’s easier to manage.
