Yogurt-Marinated Baked Chicken

Ingredients

  • 1kg chicken thigh (on the bone)

  • ½ cup yogurt

  • 2 tsp salt

  • 2 garlic cloves (minced)

  • 1 tsp ginger powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp black pepper

  • 1 tsp chilli flakes

  • 4 potatoes

  • 2 tbsp lemon juice

  • 2 tbsp oil

Directions

  • Place chicken in a bowl and add all the ingredients (except the oil). Mix well and marinate in the fridge for 4 hours or overnight.
  • Heat oil and add the chicken and potatoes. Cook on high heat (uncovered) for 30 minutes till the water is almost completely dry.
  • Preheat oven to 200C.
  • Place the chicken and potatoes in a roasting tray (with a wire rack ideally).
  • Bake in the oven (uncovered) for 15 minutes.
