Watermelon & Feta Salad

It’s close to the end of summer and the watermelons are at their absolute sweetest! I just had to try this recipe before winter comes by. It was so crunchy and refreshing, and the addition of quinoa made it filling as well. Hope you give it a try! 

Watermelon & Feta Salad

Ingredients

  • 1 cup watermelon

  • ½ cup cherry tomatoes

  • ½ cup tricolour quinoa

  • 1 cup water

  • ½ cup fresh feta

  • ½ cup rocket leaves

  • ¼ cup carrots

  • ¼ cup baby capsicums

  • ¼ cup cucumbers

  • ¼ cup pistachios (lightly toasted)

  • ¼ cup basil leaves

  • 4 tbsp fresh lime juice

  • 4 tbsp olive oil

  • 1 tbsp honey

  • salt to taste

  • freshly cracked black pepper

  • 1 tsp lime zest

  • ½ tsp red pepper flakes

Directions

  • Cut all the vegetables and watermelon to roughly an equal size.
  • Prepare the dressing by mixing lime juice, olive oil, honey, salt, cracked black pepper, lime zest and red pepper flakes.
  • Cook the quinoa: Rinse and drain the quinoa. In a medium saucepan add the quinoa and 1 cup water. Leave to soak for 15 mins. Bring to a boil and cook on a gentle simmer for 15 mins (or until all the water dries out). Now without opening the lid, leave to rest for 10 mins. Fluff the quinoa with a fork to remove any clumps.
  • Drizzle the dressing over the salad and toss to coat evenly.
