1 cup greek yogurt
1 tbsp fresh dill
1½ tbsp lemon juice
1 tbsp olive oil
½ tsp salt
¼ tsp pepper
1 cup cucumber
1 clove garlic
1 tbsp mint
Directions
- Slice the cucumber lengthwise and scoop out the seeds with a spoon or melon scooper.
- Grate the cucumber and leave it in a sieve to drain out all the water.
- Put the garlic clove, dill, mint, lemon juice, olive oil, salt and pepper in a food processor. Mix well.
- In a bowl whisk the yoghurt, and add the herb mix and drained cucumbers.
