Prepping Chicken for the Week

It’s been a busy week! 😅 Working full-time means not having time for midweek grocery runs or preparing meals from scratch. That’s why I try to do most of my meal prep on weekends. This could either be ready-to-eat meals (like curries) or mise en place (i.e. chopping veggies and marinating meat) for roasts that you may want to make on the day.

I’ve seen people stress (and rightfully so!) about cooking chicken immediately after buying it because refrigerating raw chicken can make it smell naaaaasty! 🤢

Solution? Marinate the chicken in a spice rub with oil or yogurt. Cover and refrigerate for up to 5 days. The long marination helps make the chicken tender and there’s absolutely no odd smell.
