Leftover Pita

Struggling to use up all that leftover Lebanese pita from last night’s dinner? We’ve all been there (I know I have!)

Pita doesn’t store very well. Gets tough and difficult to eat. When I have too much leftover pita, I cut it up into triangles using large kitchen scissors, place in a ziplock bag and toss in the freezer. On days when I’m in a chip-and-dip kinda mood, I take these pre-cut “chips” from the freezer, drizzle with a bit of olive oil and bake for 10 mins. And voila! A chip to go with any Middle-eastern style dip. You could even add it to fattoush as the crispy element.

Most pita chips served in restaurants are deep-fried. This baked version tastes just as good and so much better for health!
