Pancakes always end up looking flat and heavy? Trust me, we’ve all been there!
Pancake and waffle batter needs time to rest so that the gluten has time to chilllll (pun intended). If you let your batter rest for 30 mins, you’ll notice some bubbles forming in it. When you scoop it out, even the batter will be much more airy and fluffy than when you initially whipped it up.

Other tips for thick, fluffy pancakes are to:
- Make sure your batter is thick and semi-lumpy.
- Use fresh (well, not expired) baking powder and flour.
