Teriyaki Salmon with Sesame Soba Noodles

Flaky salmon fillets, glazed with a sticky, sweet teriyaki sauce and served alongside nutty sesame soba noodles. It’s a dish that’s bursting with flavour and sure to impress even the pickiest eaters.

Teriyaki Salmon with Sesame Soba Noodles might sound like something you’d find on a fancy restaurant menu, but fear not – it’s actually quite simple to make at home.

You start by cooking the Sesame Soba Noodles. Soba noodles are a traditional Japanese staple made from buckwheat flour, which gives them a unique nutty flavour and slightly chewy texture. They’re not only delicious but also packed with nutrients, making them a healthy choice for any meal. One of the things that make soba noodles so versatile is their ability to pair well with a wide range of flavours and ingredients. In this recipe, we’re tossing them with a drizzle of sesame oil and sesame seeds, which adds a rich, toasty flavour that complements the teriyaki salmon perfectly.

Marinate the salmon in teriyaki marinade, cook, cut into chunks, and mix in with the noodles.

Teriyaki Salmon with Sesame Soba Noodles

Ingredients

  • 200gm soba noodles

  • 5 tsp soy sauce

  • 2 tsp honey

  • 2 tsp sesame oil

  • 5 tbsp spring onions (chopped)

  • 2 tsp vinegar

  • salt to taste

  • 250gm salmon (skin off)

  • ¼ cup teriyaki marinade

  • 1 tbsp oil

  • ½ tsp red chilli flakes

  • 3 tbsp sesame seeds

Directions

  • Prep the salmon by removing the skin and bones, if any.
  • Cut the salmon fillets into 1-1½” cubes. Add the teriyaki marinade, mix well, and set aside for 30 minutes. I use store-bought (Ayam’s Teriyaki marinade).
  • Toast the sesame seeds in a dry pan over high heat until golden. Set aside.  
  • Bring a large pot of water to a boil and add some salt. Add the soba noodles and cook on high heat for about 5 minutes (tender but not mushy). Immediately drain and run under cold water to stop the cooking process.
  • In a serving bowl, mix vinegar, soy sauce, honey, and sesame oil. Add the spring onions and noodles. Toss to combine. 
  • Add sesame seeds and red chili flakes. Mix well. 
  • Add cooking oil to a medium frying pan and cook the salmon pieces on medium heat for 4 mins on each side. I like to lightly char the salmon’s outer skin. Rest for 2-3 mins.
  • Serve the salmon on top of the noodles.
