Sweet potato and zucchini fritters

Ready to jazz up your veggie game with something seriously scrumptious? Say hello to Sweet Potato and Zucchini Fritters! To be honest, I was skeptical making this because Aamir’s not a huge fan of vegetarian food. But I got myself a convert with this recipe! 😃

These healthy fritters are great as an appetiser, or you could add them to a bun for a tasty snack or light lunch 🍔

Sweet Potato & Zucchini Fritters

Ingredients

  • Fritters
  • 1/2 sweet potato (300gm)

  • 1 zucchini (200gm)

  • 1/2 cup cheddar cheese

  • 3 eggs

  • 1/2 cup almond meal

  • 1/4 cup coriander leaves

  • 1 green chilli

  • 1/2 cup spring onions

  • Salt and pepper

  • 1/2 tsp red chilli flakes

  • Yogurt Dip
  • 4 tbsp Greek yogurt

  • 2 tbsp mayo

  • 1/2 clove garlic minced

  • 1/2 tsp chopped dill

  • 1/2 tsp dried chives

  • 1/2 tsp salt

Directions

  • Yogurt Dip
  • Stir all the ingredients together.
  • Fritters
  • Grate the zucchini and sweet potato. Spread on a tea towel and sprinkle with salt. Leave to drain and dry for 30 mins.
  • Put the drained / squeezed zucchini and sweet potato in a bowl. Add the almond meal, spring onions, green chilli, coriander, red chilli flakes, cheese, eggs and seasoning.
  • Heat 2-3 tbsp of oil in a large frying pan.
  • Using a large spoon, scoop the mixture onto the pan and flatten lightly with the back of the spoon.
  • Fry for a couple of mins on each side on medium-high heat or until golden brown.
  • Serve with a yogurt dip.
