Spinach & Feta Stuffed Chicken

Ingredients

  • 2 chicken breasts

  • ½ tbsp garlic paste

  • 1 tbsp olive oil

  • 1 cup frozen spinach

  • ½ cup feta cheese

  • 1 cup seasoned breadcrumbs

  • ¼ cup melted butter

Directions

  • Pre-heat oven to 170C.
  • To prepare the chicken, slice it in half lengthwise and hammer to tenderise.
  • Heat a medium frying pan with 1 tsp of oil and add garlic.
  • Add spinach and cook till the spinach wilts and water content has seemed to dry out.
  • Take off the heat and add set aside to cool.
  • Add feta to the cooled spinach.
  • Put spoonfuls of the mixture onto the chicken. Wrap to seal and secure with toothpicks.
  • Roll in breadcrumbs.
  • Place in a dish and pour over melted butter.
  • Bake for 30 minutes (until the chicken is cooked through).
