2 chicken breasts
½ tbsp garlic paste
1 tbsp olive oil
1 cup frozen spinach
½ cup feta cheese
1 cup seasoned breadcrumbs
¼ cup melted butter
Directions
- Pre-heat oven to 170C.
- To prepare the chicken, slice it in half lengthwise and hammer to tenderise.
- Heat a medium frying pan with 1 tsp of oil and add garlic.
- Add spinach and cook till the spinach wilts and water content has seemed to dry out.
- Take off the heat and add set aside to cool.
- Add feta to the cooled spinach.
- Put spoonfuls of the mixture onto the chicken. Wrap to seal and secure with toothpicks.
- Roll in breadcrumbs.
- Place in a dish and pour over melted butter.
- Bake for 30 minutes (until the chicken is cooked through).
