Spinach Artichoke Dip

Ingredients

  • 2 tbsp olive oil

  • 1 garlic clove

  • 250gm frozen spinach

  • red chilli flakes

  • 150gm artichokes in brine

  • 250gm Philadelphia cream cheese

  • ¼ cup cheddar cheese

  • ¼ cup parmesan cheese

  • ⅓ cup Greek yogurt

  • salt and pepper

  • 2 tbsp mayonnaise

Directions

  • Thaw the frozen spinach and drain in a colander. Squeeze out all the excess water.
  • Drain and then roughly chop the artichokes.
  • Heat olive oil in a medium pot over medium heat.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Add the spinach and cook on medium heat for a few minutes (until it starts to dry out). 
  • Add red chili flakes, salt, and pepper.
  • Add the artichokes and continue to cook for another minute.
  • Reduce heat to low and stir in the cream cheese, cheddar, and half the parmesan. Mix until melted and well combined. 
  • Stir in the mayo and Greek yogurt.
  • Pour into an oven-proof serving dish and sprinkle remaining Parmesan on top.
  • Grill in the oven for 5-6 minutes (or you could use a kitchen flame torch to toast the top).
  • Serve hot with crispy bread.
