Spaghetti with Meatballs (Chicken)

Ingredients

  • 1 packet spaghetti

  • 3 tsp salt

  • 1 tsp oil

  • ½ kg chicken meatballs (cooked)

  • Sauce
  • 1 tbsp oil

  • 2 garlic cloves (minced)

  • ½ white onion (finely chopped)

  • 100gm fresh Swiss brown mushrooms (chopped)

  • 1 tomato (chopped)

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp red pepper flakes

  • ½ tsp dried mixed herbs

  • 1 cup passata

  • grated parmesan to garnish

  • 1 cup baby spinach

Directions

  • Prepare meatballs following my Chicken Meatballs recipe.
  • Half-fill a pot with water, salt and oil. Bring to a boil.
  • While you wait for the water to boil, in a separate frying pan heat about 1 tbsp oil. Fry the minced garlic till golden.
  • Add and saute the chopped onions till translucent (don’t wait for it to change colour).
  • Add mushrooms and cook till it changes colour and the water dries out.
  • Add the tomato, cover and cook on medium heat for 5 minutes till tomatoes are soft.
  • Add the pasta sauce, salt, pepper, red pepper flakes, and dried mixed herbs.
  • Add the pre-cooked meatballs. Cover and cook on low heat for 10 minutes to allow the flavour to develop.
  • Turn off the heat and stir in the baby spinach.
  • In the pot of boiling water, add pasta and cook till almost done (al dente).
  • Scoop out about ½ cup of the pasta water in a mug. You can add this to the meatball mixture if it’s drying out.
  • Drain the pasta.
  • Take out the pasta in a serving bowl/plate. Top with the meatball mixture and shaved parmesan cheese.
