Salmon Tacos

5 soft shell tortillas (store bought)
- Fish
200gm salmon
Taco seasoning mix
1 tbsp oil for frying
- Toppings
pickled jalapeños
black olives
1 corn (charred)
green capsicums
lettuce
cheddar cheese (optional)
onions
kidney beans
- Dressing
3 tbsp olive oil
2 tbsp lime juice
1/4 tsp salt
1 garlic clove
1/4 tsp honey
1/4 cup coriander leaves
1/4 cup mayo
Directions
- Mix fish ingredients together and leave to marinate in the fridge for 30 mins.
- Prepare the toppings and place in separate small bowls.
- To prepare the dressing add all the ingredients (except mayo) into an electric blender and mix. Stir the mayo in by hand.
