1 cup plain flour
1 tbsp sugar
2 tsp baking powder
¼ tsp salt
1 egg
1 cup milk
2 tbsp oil
1-2 drops vanilla essence
Directions
- Combine all dry ingredients.
- Make a well in the centre of the mixture.
- In a separate bowl beat the egg. Add milk, oil and vanilla essence.
- Pour the egg mix in the dry ingredients and mix well. The batter should be slightly lumpy. Let the batter rest for 15-20 minutes. This lets the baking powder do its thing.

- With a ¼ cup measure pour batter into a lightly greased frying pan. Cook over medium heat for about 2 minutes on each side (or until golden brown).
