Ingredients

  • ½ kg mutton/lamb

  • 1 cup yogurt (optional)

  • 2 tbsp garlic & ginger paste

  • 2 tsp red chilli powder

  • 2 tsp coriander powder

  • ½ tsp turmeric powder

  • ½ tsp + 2 tsp salt

  • 2 cups rice

  • 2 onions

  • ½ kg (4-5) tomatoes

  • 4 green chillies

  • 2 potatoes

  • 3 tbsp coriander leaves

Directions

  • Thinly slice the onions.
  • Chop the tomatoes into small pieces.
  • Chop the potatoes into medium-small pieces.
  • Wash and soak the rice in water for at least an hour.
  • In half cup of hot oil, fry the onions till golden brown. Strain and set aside.
  • Add mutton and fry for 1 minute on high flame, stirring constantly.
  • Add half the fried onions, coriander powder, red chilli powder, garlic-ginger paste, ½ tsp salt, and turmeric powder. Mix well.
  • Cover and cook on low flame for 30 minutes – till the meat is half done.
  • Add tomatoes and potatoes and cover and cook on medium heat until the mutton is tender.
  • Beat yogurt and add to the meat. Stir well.
  • Drain the rice and add to the meat. Stir well.
  • Add enough water so that it is about 3/4″ above the level of the rice.
  • Add 1 tsp salt and mix well.
  • Bring to a boil and then cover and cook on low-medium heat for about 15-20 minutes.
  • Check on the rice. If the water has almost completely dried up, reduce the flame to low and cover and cook again till the rice is done.
  • Remove from flame and garnish with coriander leaves.
