Lauki Raita

Lauki ka raita is a South Asian condiment made with yogurt to accompany main course combinations like steamed rice, dal, shami kabab. This is a super easy recipe that you can make whenever you’re short of time.

Ingredients

  • 1 lauki (bottle gourd)

  • 1 tsp cumin (whole)

  • salt to taste

  • ⅓ kg yogurt

  • 1 green chilli (finely chopped)

  • 2 tbsp coriander leaves

  • ½ tsp cumin powder

  • 1 tbsp oil

  • ¼ tsp red chilli powder (optional)

Directions

  • Peel and chop the lauki into small pieces.
  • Heat oil and fry whole cumin for a few seconds.
  • Add the lauki, cover and cook on low heat until it’s tender.
  • Add salt and cool.
  • In a separate bowl beat yogurt and add salt, cumin powder, green chilies, coriander leaves, and the cooked lauki. Mix well. If the mixture seems too thick add a little bit of water.
