Lauki ka raita is a South Asian condiment made with yogurt to accompany main course combinations like steamed rice, dal, shami kabab. This is a super easy recipe that you can make whenever you’re short of time.

1 lauki (bottle gourd)
1 tsp cumin (whole)
salt to taste
⅓ kg yogurt
1 green chilli (finely chopped)
2 tbsp coriander leaves
½ tsp cumin powder
1 tbsp oil
¼ tsp red chilli powder (optional)
Directions
- Peel and chop the lauki into small pieces.
- Heat oil and fry whole cumin for a few seconds.
- Add the lauki, cover and cook on low heat until it’s tender.
- Add salt and cool.
- In a separate bowl beat yogurt and add salt, cumin powder, green chilies, coriander leaves, and the cooked lauki. Mix well. If the mixture seems too thick add a little bit of water.
