Kurkuri Bhindi (Crispy Fried Okra)

Ingredients

  • okra

  • fried onions

  • cumin

  • salt

  • red pepper flakes

  • oil

Directions

  • Wash the okra. Pat dry. Cut into fine slices (not too fine, but not too thick either).
  • Heat oil (don’t be stingy!) in a large frying pan.
  • Add cumin seeds and fry for a few seconds before you add the okra.
  • Add salt and chilli flakes. Cook on medium heat till water dries and the okra gets crispy. Do not stir too often or the okra will get slimy.
  • Remove excess oil.
  • Add fried onions.
  • Serve with roti or rice. Pairs well with lentils (masoor daal).
