Hazelnut Fig & Orange Cookies

Ingredients

  • 2¾ cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 cup butter

  • ¾ cup granulated sugar

  • ¾ cup packed brown sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • ½ cup dried figs (chopped)

  • ½ cup hazelnuts (chopped)

  • 4 tbsp orange juice

  • 4 tbsp orange zest

Directions

  • Pre-heat oven to 175C.
  • Mix flour, baking powder and salt. Set aside.
  • In a separate bowl beat butter, sugar, brown sugar and vanilla essence till creamy.
  • Add orange juice and zest. 
  • Add eggs one at a time, beating after every addition.
  • Add flour mix. Mix well.
  • Stir in the chopped figs and hazelnuts to the dough.
  • Refrigerate for 30 minutes.
  • Spoon out into lined baking tray.
  • Bake for 8-11 minutes.
  • Cool for 10 mins before serving.
