Basic, everyday chocolate cupcakes that are great for when you’re short on time or just in the mood for something sweet with your tea/coffee.

150gm butter (softened)
150gm caster sugar
150gm all-purpose flour
15gm cocoa powder
3 eggs
1 tsp baking powder
1 tsp vanilla extract
Directions
- Preheat the oven to 180C.
- Prepare your cupcake pans with liners.
- Sift the flour, baking powder and cocoa powder in a bowl. Set aside.
- In a separate bowl, use an electric beater (or stand mixer) to beat the butter until creamy (about 2 minutes).
- Add the sugar and beat on medium speed for another 30 seconds or 1 min until mixed well.
- Add eggs one at a time beating lightly to incorporate.
- Add vanilla extract and the flour mix. Fold by hand using a spatula until just combined. Do not over-beat the batter.
- Pour into cupcake liners (fill only ¾ way up).
- Bake for 20 minutes (or until an inserted toothpick comes out clean).
- Top with this delicious chocolate buttercream frosting if you want to fancy it up.
