Basic, everyday chocolate cupcakes that are great for when you’re short on time or just in the mood for something sweet with your tea/coffee.

Ingredients

  • 150gm butter (softened)

  • 150gm caster sugar

  • 150gm all-purpose flour

  • 15gm cocoa powder

  • 3 eggs

  • 1 tsp baking powder

  • 1 tsp vanilla extract

Directions

  • Preheat the oven to 180C.
  • Prepare your cupcake pans with liners.
  • Sift the flour, baking powder and cocoa powder in a bowl. Set aside.
  • In a separate bowl, use an electric beater (or stand mixer) to beat the butter until creamy (about 2 minutes).
  • Add the sugar and beat on medium speed for another 30 seconds or 1 min until mixed well.
  • Add eggs one at a time beating lightly to incorporate.
  • Add vanilla extract and the flour mix. Fold by hand using a spatula until just combined. Do not over-beat the batter.
  • Pour into cupcake liners (fill only ¾ way up).
  • Bake for 20 minutes (or until an inserted toothpick comes out clean).
  • Top with this delicious chocolate buttercream frosting if you want to fancy it up.
