2 large tomatoes
1 can Italian diced tomatoes
1/2 cup onion
1 green chilli
1/3 cup fresh coriander leaves
2 cloves garlic
1-2 tbsp lime juice
1 tsp cumin powder
2 tsp salt
Directions
- Remove seeds from the tomatoes and cut into chunks.
- Roughly chop the garlic, chilli, onions, and coriander leaves.
- Put everything into a food processor and pulse in 2 second bursts until all ingredients are chopped. Don’t over process the mixture, you want it to still have texture and not be a puree.
- Refrigerate until ready to use.
