Ingredients

  • 2 large tomatoes

  • 1 can Italian diced tomatoes

  • 1/2 cup onion

  • 1 green chilli

  • 1/3 cup fresh coriander leaves

  • 2 cloves garlic

  • 1-2 tbsp lime juice

  • 1 tsp cumin powder

  • 2 tsp salt

Directions

  • Remove seeds from the tomatoes and cut into chunks.
  • Roughly chop the garlic, chilli, onions, and coriander leaves.
  • Put everything into a food processor and pulse in 2 second bursts until all ingredients are chopped. Don’t over process the mixture, you want it to still have texture and not be a puree.
  • Refrigerate until ready to use.
