100ml olive oil
3 tbsp balsamic vinegar
2 tbsp pomegranate molasses
3 tsp sumac
1 tsp red chilli flakes
2 tbsp fresh parsley
1 clove garlic
2 tbsp (60-70g) chargrilled artichokes
2 tbsp (60-70g) semi-dried tomatoes
1 tbsp (5-6) green olives
freshly ground salt and pepper
Directions
- In a bowl add the olive oil, vinegar, pomegranate molasses, and spices.
- Finely chop the semi-dried tomatoes, olives, garlic, artichoke, and fresh parsley.

- Mix everything together and set aside to let the flavours develop.
- Serve with fresh crusty bread as a starter.
