This quick blackberry cobbler is super easy to make and absolutely delicious!

1 cup plain flour
½ cup butter
1¼ cup + 2 tbsp granulated sugar
1½ tsp baking powder
½ tsp salt
1 cup milk
2 cups blackberries
Directions
- Preheat oven to 175C.
- In a medium bowl mix 1 cup sugar, flour, baking powder, and salt.
- Add milk and mix.
- Add melted butter and whisk until smooth.
- Pour into the baking pan and scatter blackberries on top.
- Sprinkle ¼ cup sugar on the top.
- Bake until golden and crispy on the top (about 50-60 minutes).
- When you have 10 minutes remaining in baking time; i.e. the topping is just starting to turn golden; sprinkle the remaining 2 tbsp sugar.
- Serve warm with vanilla ice cream or whipped cream.
