Stuck with too much leftover fresh basil? Homemade fresh basil pesto is a great way to use up basil and a great addition to pasta, garlic bread, roast chicken, pizza.
Basil Pesto

1 cup basil leaves (packed)
3 tbsp pine nuts (or walnuts)
¼ cup parmesan cheese
1 clove garlic
3 tsp lemon juice
¼ cup olive
¼ tsp salt
¼ tsp pepper
Directions
- Place all the ingredients (except olive oil) in a food processor.

- Pulse until finely ground.

- Slowly pour the olive oil into the mixture while the food processor is running.

Notes
- I didn’t have any pine nuts so I used walnuts instead. Worked out great!
- If you don’t like the strong taste of basil, you can subside it but swapping out half the basil for baby spinach.
