This crunchy, sweet and tangy salad makes for a good side to any grilled meat dish.
Apple Feta Spinach Salad

3-4 cups baby spinach
1 red delicious apple
1 granny smith apple
¼ cup red onion
¼ cup walnuts
½ cup feta cheese
¼ cup dried cranberries
¼ cup olive oil
¼ cup balsamic vinegar
3 tbsp maple syrup
1 tbsp mustard (dijon or regular)
Directions
- To make the dressing, mix the olive oil, balsamic vinegar, maple syrup and mustard. Set aside.
- Cut the apples into even chunks.
- Finely slice the onions.
- Roughly chop the walnuts.
- Crumble the feta.
- Mix together all the salad ingredients. Add the dressing, toss and serve immediately.

Notes
- If you’re preparing the salad in advance, add the dressing just before you serve it.
- You can substitute feta cheese for goats cheese, walnuts for almonds, maple syrup for honey or sugar, and balsamic vinegar for apple cider.
