Apple Feta Spinach Salad

Ingredients

  • 3-4 cups baby spinach

  • 1 red delicious apple

  • 1 granny smith apple

  • ¼ cup red onion

  • ¼ cup walnuts

  • ½ cup feta cheese

  • ¼ cup dried cranberries

  • ¼ cup olive oil

  • ¼ cup balsamic vinegar

  • 3 tbsp maple syrup

  • 1 tbsp mustard (dijon or regular)

Directions

  • To make the dressing, mix the olive oil, balsamic vinegar, maple syrup and mustard. Set aside.
  • Cut the apples into even chunks.
  • Finely slice the onions.
  • Roughly chop the walnuts.
  • Crumble the feta.
  • Mix together all the salad ingredients. Add the dressing, toss and serve immediately.

Notes

  • If you’re preparing the salad in advance, add the dressing just before you serve it.
  • You can substitute feta cheese for goats cheese, walnuts for almonds, maple syrup for honey or sugar, and balsamic vinegar for apple cider.
