A simple tea shortbread-like cookie recipe that requires 10 mins of prep time and 20 mins in the oven.

Ingredients

  • Dough
  • ½ cup almond meal (or almond flour)

  • 1½ tbsp icing sugar

  • drop of almond extract

  • 1½ tbsp butter

  • pinch of salt

  • 2-3 tbsp chopped nuts (pecans / walnuts / almonds)

  • Dusting
  • 1½ tbsp icing sugar

Directions

  • Preheat oven to 160C.
  • In a bowl mix together the almond meal, 1½ tbsp icing sugar, almond extract, butter (softened) and salt until it forms a dough.
  • Add in the finely chopped nuts and mix.
  • Divide the dough into 8 equal portions.
  • Take one portion of the divided dough and roll it into a log between your palms. Press gently in the centre with your thumb to shape into a crescent. Don’t overwork the dough, the warmth of your palms can cause the butter to melt and make it harder to handle.
  • Place in a lined baking tray (1″ apart).
  • Bake for 20 mins (or until golden from the top).
  • Let cool and then dust with the remaining 1½ tbsp icing sugar.
