- Dough
½ cup almond meal (or almond flour)
1½ tbsp icing sugar
drop of almond extract
1½ tbsp butter
pinch of salt
2-3 tbsp chopped nuts (pecans / walnuts / almonds)
- Dusting
1½ tbsp icing sugar
Directions
- Preheat oven to 160C.
- In a bowl mix together the almond meal, 1½ tbsp icing sugar, almond extract, butter (softened) and salt until it forms a dough.
- Add in the finely chopped nuts and mix.
- Divide the dough into 8 equal portions.
- Take one portion of the divided dough and roll it into a log between your palms. Press gently in the centre with your thumb to shape into a crescent. Don’t overwork the dough, the warmth of your palms can cause the butter to melt and make it harder to handle.
- Place in a lined baking tray (1″ apart).
- Bake for 20 mins (or until golden from the top).

- Let cool and then dust with the remaining 1½ tbsp icing sugar.
