Basil Pesto

Stuck with too much leftover fresh basil? Homemade fresh basil pesto is a great way to use up basil and a great addition to pasta, garlic bread, roast chicken, pizza.

Ingredients

  • 1 cup basil leaves (packed)

  • 3 tbsp pine nuts (or walnuts)

  • ¼ cup parmesan cheese

  • 1 clove garlic

  • 3 tsp lemon juice

  • ¼ cup olive

  • ¼ tsp salt

  • ¼ tsp pepper

Directions

  • Place all the ingredients (except olive oil) in a food processor. 
  • Pulse until finely ground.
  • Slowly pour the olive oil into the mixture while the food processor is running.

Notes

  • I didn’t have any pine nuts so I used walnuts instead. Worked out great!
  • If you don’t like the strong taste of basil, you can subside it but swapping out half the basil for baby spinach.
