Chicken Gyros with Tzatziki Sauce 🌯

I used boneless chicken thighs and marinated it for a good 3 days. Came out super tender. Fresh veggies add a nice crunch.

Ingredients

  • 1kg boneless chicken thighs

  • 1 cup greek yogurt

  • 1 tsp fresh dill

  • 1 tsp parsley (optional)

  • ½ tsp dried oregano

  • 1 tbsp lemon zest

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 2 tsp salt

  • ¼ tsp pepper

  • 1 cucumber (chopped)

  • ½ tomato (chopped)

  • ½ onion (chopped)

  • french fries (aka chips)

  • 6 greek-style pitas

Directions

  • To the (uncut) chicken thighs add greek yogurt, fresh dill, parsley (optional), dried oregano, lemon zest, lemon juice, olive oil, salt and pepper. Set in the fridge to marinate for a few hours or overnight.
  • Heat a little oil in a pan and cook the chicken (uncovered) for 15-20 minutes (until golden from each side). If you have a grill or BBQ to cook the chicken, EVEN BETTER!
  • Prepare the Tzatziki Sauce.
  • Chop the tomato, cucumber, and onion.
  • Prepare the fries (I usually air-fry these).
  • Toast the pitas in a frying pan.
  • Spread a layer of the tzatziki sauce on the pita. 
  • Layer with chicken, chopped vegetables and fries.
  • Wrap and enjoy!
