German Apple Cake

A light, moist, delicious tea cake that isn’t sickly sweet or too decadent. But it can easily be elevated to a “dessert” by pairing with some ice-cream.

I’ve become kind of obsessed with tea cakes lately. They’re light, moist and so simple to make. Today’s experiment was a German Apple Cake. Apple cakes are perfect for, well, any time of the day, really! 😋🍎 Light and delicious. This recipe wasn’t sickly sweet so could be easily had as a light accompaniment with tea/coffee, or as a dessert if paired with ice cream.

Ingredients

  • 1½ cups (225gm) all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ cup butter

  • ¾ cup caster sugar

  • 1 tsp vanilla essence

  • 2 eggs

  • ¼ tsp salt

  • ½ cup whole milk / buttermilk

  • ½ cup flaked almonds

  • 2 cups apples (3 medium)

  • 1 tsp cinnamon powder

  • 3 tbsp raw sugar

Directions

  • Preheat oven to 170C.
  • Peel, core and thinly slice the apples using a mandoline.
  • Sprinkle cinnamon powder on the apples and toss to coat evenly. Set aside.
  • Sift together the dry ingredients (flour, baking powder, baking soda and salt). Set aside.
  • In a separate bowl, use an electric beater to beat the butter (room temperature) and sugar till fluffy.
  • Add vanilla extract and eggs. Mix till combined.
  • Add milk and mix for a few seconds.
  • Add the flour mixture a few tablespoons at a time and gently fold using a spatula.
  • Line a 9″ round baking pan with baking paper.
  • Spread half the batter into the pan and level with a spatula.
  • Place half the apple slices on the batter. 
  • Pour over the remaining batter. Level with spatula.
  • Place the remaining apple slices.
  • Sprinkle with 3 tbsp raw sugar and flaked almonds.
  • Bake for 45 minutes (or until toothpick comes out clean).
  • Take out of the oven and let it cool (in the pan) for 15-20 minutes.
  • Serve warm with ice-cream.

Notes

  • I like to use semi-tart apples like Pink Lady.
  • You can add a few tablespoons of brown sugar to the apples slices if you like your cake to be sweet-sweet
  • Make sure all your ingredients are at room temperature (eggs, milk, butter).
