BBQ Lamb Cutlets with Mint Chutney

Time to take out the grill and make the most of the few sunny days we have this week. Served with a fresh mint chutney and garlicky dill yogurt makes this a great sharing dish for friends.

BBQ Lamb Cutlets with Mint Chutney

Ingredients

  • 6 lamb cutlets (or grilling chops)

  • 1 tbsp oil

  • salt to season

  • pepper to season

Directions

  • Pat dry the cutlets.
  • Drizzle with oil and season with salt and pepper.
  • Heat a barbecue grill on medium-high. Cook the lamb on the grill for 2-3 minutes on each side (or until cooked to your liking). 
  • Transfer to a plate, loosely cover with foil, and leave to rest for 5-10 minutes.
  • Prepare the mint chutney.
  • Arrange lamb on a serving plate and dress with the mint chutney.
  • Serve with dill raita.
