Ingredients

  • ¾ cup (95g) all-purpose flour

  • ½ cup cocoa powder

  • ¾ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 eggs (room temp)

  • ½ cup sugar

  • ½ cup packed light brown sugar

  • ⅓ cup oil

  • 2 tsp vanilla essence

  • ½ cup buttermilk (room temp)

Directions

  • Preheat the oven to 180C.
  • Prepare your cupcake pans with liners.
  • In a large bowl, whisk the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  • In a separate bowl, add the eggs, oil, sugars, and vanilla. Beat on medium-high speed until combined. 
  • Add half the buttermilk and mix for 30 seconds.
  • Add half the dry ingredients and mix slowly (so that the flour mix doesn’t fly everywhere) until just combined.
  • Repeat steps 5 and 6. Do not overbeat. The batter will be thin.
  • Pour the batter into the cupcake liners to fill halfway.
  • Bake for 18-20 minutes or until a toothpick inserted in the centre comes out clean.
  • Take out of the oven and allow to cool completely in the pan.

  • Pipe the buttercream on the cupcakes. Refrigerate until ready to serve.
