It’s close to the end of summer and the watermelons are at their absolute sweetest! I just had to try this recipe before winter comes by. It was so crunchy and refreshing, and the addition of quinoa made it filling as well. Hope you give it a try!
Watermelon & Feta Salad

1 cup watermelon
½ cup cherry tomatoes
½ cup tricolour quinoa
1 cup water
½ cup fresh feta
½ cup rocket leaves
¼ cup carrots
¼ cup baby capsicums
¼ cup cucumbers
¼ cup pistachios (lightly toasted)
¼ cup basil leaves
4 tbsp fresh lime juice
4 tbsp olive oil
1 tbsp honey
salt to taste
freshly cracked black pepper
1 tsp lime zest
½ tsp red pepper flakes
Directions
- Cut all the vegetables and watermelon to roughly an equal size.
- Prepare the dressing by mixing lime juice, olive oil, honey, salt, cracked black pepper, lime zest and red pepper flakes.
- Cook the quinoa: Rinse and drain the quinoa. In a medium saucepan add the quinoa and 1 cup water. Leave to soak for 15 mins. Bring to a boil and cook on a gentle simmer for 15 mins (or until all the water dries out). Now without opening the lid, leave to rest for 10 mins. Fluff the quinoa with a fork to remove any clumps.
- Drizzle the dressing over the salad and toss to coat evenly.
