Prawn Burritos with Coriander Lime Dressing

A 30-minute recipe ideal for a weeknight dinner!

This is a pretty simple recipe because it relies on a lot of convenience: frozen marinated prawns, ready sauces, store-bought tortillas, ready homemade taco seasoning mix. With all this on hand, it takes no more than 20-30 mins to prepare these wraps.

Ingredients

  • 500gm marinated prawns

  • taco seasoning

  • ½ cup lettuce

  • 2 spring onions

  • ½ capsicum

  • store-bought tortillas

  • ¼ cup greek yogurt

  • 1 tbsp mayo

  • 1 garlic clove

  • ⅓ bunch coriander leaves

  • ½ green chilli (deseeded)

  • juice of 1 lime

  • ½ tsp honey

  • canned corn

  • black olives

  • sriracha sauce

  • green sriracha sauce

Directions

  • Toss the prawns in taco seasoning and set aside.
  • Chop the lettuce, spring onions and capsicums.
  • Prepare the coriander lime dressing by combining greek yogurt, mayo, minced garlic, coriander leaves, finely sliced green chilli, lime juice, and honey.
  • Lightly oil a frying pan and cook the prawns on medium-high heat for 2 mins on each side. Set aside.
  • Heat some store-bought tortillas. 
  • Assemble by placing prawns in the tortilla followed by the fresh veggies, some black olives, and corn. Drizzle with the coriander lime dressing, sriracha sauce and green sriracha sauce.
