Spinach Artichoke Dip

2 tbsp olive oil
1 garlic clove
250gm frozen spinach
red chilli flakes
150gm artichokes in brine
250gm Philadelphia cream cheese
¼ cup cheddar cheese
¼ cup parmesan cheese
⅓ cup Greek yogurt
salt and pepper
2 tbsp mayonnaise
Directions
- Thaw the frozen spinach and drain in a colander. Squeeze out all the excess water.
- Drain and then roughly chop the artichokes.
- Heat olive oil in a medium pot over medium heat.
- Add garlic and cook until fragrant, about 30 seconds.
- Add the spinach and cook on medium heat for a few minutes (until it starts to dry out).
- Add red chili flakes, salt, and pepper.
- Add the artichokes and continue to cook for another minute.
- Reduce heat to low and stir in the cream cheese, cheddar, and half the parmesan. Mix until melted and well combined.
- Stir in the mayo and Greek yogurt.
- Pour into an oven-proof serving dish and sprinkle remaining Parmesan on top.
- Grill in the oven for 5-6 minutes (or you could use a kitchen flame torch to toast the top).
- Serve hot with crispy bread.
