quick mini cakes

Finger food is my thing now. I love making it. Serving it. Eating it. It’s just such a fun way to present food.

While I was very interested in making individual servings of cakes (aka “mini cakes”), I wasn’t too keen on investing in even more bakeware (my kitchen cabinets are already overflowing with baking pans, cookie cutters and piping nozzles 🙄).

So to make mini cakes, I simply:

  • Pour the cake batter in a large rectangular baking pan (thin layer like a sheet cake).
  • Bake for a shorter period of time than a regular cake (because it’s not as deep).
  • Let cool for a few hours before taking it out of the pan.
  • Use a cookie cutter to cut out even circles.
  • Pipe buttercream on top.

Pretty easy, huh?! 😀
