Place on low heat. Add more cream and keep whisking till it comes together.

I had some leftover creamy mushroom sauce from the day before so I thought I would freshen it up by heating it very slowly. Based on my past experience, I did take a few precautions, like:
- Heating it on a double boiler
- Setting the flame on very low
- Watching it like a hawk
What I did not do is get it to room temperature before starting to heat it up. The sudden change in temperature broke the sauce — no surprises there 🤦🏻♀️🙄
I hate throwing away food so I quickly googled how to save my sauce. As expected, it suggested 500 (read: 5) different things. What I tried (and worked for me) is whisking in more cream. It took just a couple of mins and it magically came together!
Some websites suggested adding water but I wasn’t sure if that would dilute the sauce and I wanted to keep the consistency thick and creamy.
We all have pitfalls in our daily lives. While sharing our successes with our friends is good, it’s also important to be open about our failures, and how we managed to overcome them (sometimes we don’t, and that’s ok too!)
