Salmon Tacos

Ingredients

  • 5 soft shell tortillas (store bought)

  • Fish
  • 200gm salmon

  • Taco seasoning mix

  • 1 tbsp oil for frying

  • Toppings
  • pickled jalapeños

  • black olives

  • 1 corn (charred)

  • green capsicums

  • lettuce

  • cheddar cheese (optional)

  • onions

  • kidney beans

  • Dressing
  • 3 tbsp olive oil

  • 2 tbsp lime juice

  • 1/4 tsp salt

  • 1 garlic clove

  • 1/4 tsp honey

  • 1/4 cup coriander leaves

  • 1/4 cup mayo

Directions

  • Mix fish ingredients together and leave to marinate in the fridge for 30 mins.
  • Prepare the toppings and place in separate small bowls.
  • To prepare the dressing add all the ingredients (except mayo) into an electric blender and mix. Stir the mayo in by hand.
