Italian Chicken Casserole

Got this recipe out of my mom’s Betty Crocker recipe book. So easy to make that even Aamir can make it 😀

Italian Chicken Casserole

Ingredients

  • 1 cup boneless chicken (cut in strips)

  • ½ cup tomato paste

  • 1 medium onion (thinly sliced)

  • 1 tsp pepper

  • ½ tsp chilli powder

  • 3 eggs (2 – hard boiled, 1 – raw)

  • ¾ tsp mustard paste

  • ½ tsp garlic

  • 1 tbsp flour

  • 1 capsicum (sliced)

  • 1 tbsp Worcestershire sauce

  • 4 tbsp oil

  • 2 cups elbow macaroni

  • ½ cup grated cheddar cheese

  • 1 cup white sauce

Directions

  • Preheat the oven to 180 degrees.
  • Boil the macaroni.
  • Prepare the white sauce.
  • Heat oil in a pot and fry onions till golden brown.
  • Add chicken and garlic, and fry for a few minutes.
  • Add flour, salt and pepper, mustard, Worcestershire sauce, chilli powder and capsicums.
  • Add enough water to cook the chicken and leave a little gravy.
  • Grease a casserole dish.
  • Add the chicken mixture in the dish.
  • Arrange boiled eggs in a layer on top of that.
  • Then spread out the macaroni on top of that.
  • Then pour the chicken mixture on top of that again.
  • Pour white sauce all over to cover it completely.
  • Sprinkle grated cheese.
  • Beat an egg and spread on the top.
  • Dot with butter.
  • Bake for 20 minutes.
