Light pancakes (crepes) best served with maple syrup/pancake syrup/jam/honey/fruits and whipped cream.

Ingredients

  • ½ cup milk

  • 3 eggs

  • 3 tbsp plain flour

  • 4 tsp sugar

  • pinch of salt

  • ¼ tsp baking powder

  • oil for frying

Directions

  • Beat all ingredients together with an electric beater until you get a smooth batter. Let the batter rest for 15-20 minutes.
  • Heat a frying pan and drizzle about ¼ tsp of oil to grease the pan.
  • With a ladle, spoon out about ⅓ of the batter and pour into the centre of the pan. Using the handle, rotate the pan in a circular motion so that the batter spreads to make an even crepe.
  • When one side of the crepe is golden, flip with a spatula to cook the other side.
  • When both sides are fried to a golden brown, take out into a serving plate and serve with your choice of topping.
