½ cup milk
3 eggs
3 tbsp plain flour
4 tsp sugar
pinch of salt
¼ tsp baking powder
oil for frying
Directions
- Beat all ingredients together with an electric beater until you get a smooth batter. Let the batter rest for 15-20 minutes.
- Heat a frying pan and drizzle about ¼ tsp of oil to grease the pan.
- With a ladle, spoon out about ⅓ of the batter and pour into the centre of the pan. Using the handle, rotate the pan in a circular motion so that the batter spreads to make an even crepe.
- When one side of the crepe is golden, flip with a spatula to cook the other side.
- When both sides are fried to a golden brown, take out into a serving plate and serve with your choice of topping.
