Mung Bean Noodle Salad

Another recipe I got off a cooking channel. It’s the perfect recipe for when you want a healthy salad to go with your meal, but don’t want to go with the boring greens you eat usually.

Mung Bean Noodle Salad

Ingredients

  • 2 cloves garlic

  • 4-5 spring onions

  • 1 onion

  • 3 tomatoes

  • 1 green chilli

  • Mung bean noodles (aka glass noodles)

  • salt to taste

  • 1 tsp sesame oil

  • 2 tsp soy sauce

  • 2 tsp fish sauce

  • ¼ tsp brown sugar

  • 1 tsp sesame seeds

  • 2 lemons

  • a dash of pepper

Directions

  • Chop the spring onions and green chillies.
  • Thinly slice the onion and tomatoes.
  • Half-fill a pot with water and bring to a boil.
  • Add the noodles and boil for 3 minutes.
  • Drain the noodles and pass through cold water under tap until it reaches room temperature.
  • Put the noodles in a large bowl.
  • Add the cut vegetables to the noodles and mix well.
  • In a small bowl mix all the ingredients of the dressing together.
  • Add the dressing to the noodles.

Notes

  • Add grilled prawns to this if you want a protein.
