Another recipe I got off a cooking channel. It’s the perfect recipe for when you want a healthy salad to go with your meal, but don’t want to go with the boring greens you eat usually.

2 cloves garlic
4-5 spring onions
1 onion
3 tomatoes
1 green chilli
Mung bean noodles (aka glass noodles)
salt to taste
1 tsp sesame oil
2 tsp soy sauce
2 tsp fish sauce
¼ tsp brown sugar
1 tsp sesame seeds
2 lemons
a dash of pepper
Directions
- Chop the spring onions and green chillies.
- Thinly slice the onion and tomatoes.
- Half-fill a pot with water and bring to a boil.
- Add the noodles and boil for 3 minutes.
- Drain the noodles and pass through cold water under tap until it reaches room temperature.
- Put the noodles in a large bowl.
- Add the cut vegetables to the noodles and mix well.
- In a small bowl mix all the ingredients of the dressing together.
- Add the dressing to the noodles.
Notes
- Add grilled prawns to this if you want a protein.
