Mutton/Lamb Stew

This dish is popularly known as “kharay masalay ka gosht” in Urdu. A great dish to be had either with roti or pea pulao.

Ingredients

  • 1 kg mutton or lamb

  • 4 medium onions

  • 1 ball garlic

  • 1 inch garlic

  • 1 tsp whole peppercorn

  • 6-7 cloves

  • 1 cinnamon stick

  • ¼ kg yogurt

  • ½ tsp salt

  • 4-5 round red chilli (whole)

  • ½ cup oil

  • ½ cup fried onions

  • 4-5 green chilies

  • coriander leaves

Directions

  • Thinly slice garlic and ginger. They should be in 1:1 ratio.
  • Heat oil and fry garlic and ginger for about half a minute.
  • Add mutton and fry on high flame until mutton changes colour.
  • Add the fried onions and salt. Mix.
  • Now layer these on: onions, red chilli, peppercorn, clovers, cinnamon, yogurt (whip before adding). DO NOT MIX.
  • Cover and cook on low heat for 45 minutes (until meat is tender).
  • Garnish with green chillies and coriander leaves.
