Spinach & Garlic Potato Patties

Ingredients

  • 4 medium potatoes

  • ¼ cup milk

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 medium onion (diced)

  • 8-10 oz baby spinach (fresh & raw)

  • 3 cloves garlic (minced)

  • 1 cup grated parmesan cheese

  • 3 tbsp lemon juice

  • 2 tsp green chilies (chopped)

  • ½ tsp ground chilli flakes

  • Salt & pepper to taste

  • 1 egg (slightly beaten)

  • 2 cups crumbs (preferably Panko)

  • ¼ cup coriander leaves (chopped – optional)

Directions

  • Boil and mash potatoes.
  • Add in milk and mix till creamy.
  • Heat butter + olive oil in a skillet.
  • Add onions and fry till translucent.
  • Add garlic and spinach and fry till spinach wilts. Around 2 minutes.
  • Season with salt and pepper.
  • Add the mix to the potatoes. Add lemon juice and cheese. Mix well.
  • Make patties and dip each individual patty first in egg then in crumbs.
  • Heat oil in a skillet and fry the patties till golden.
