Bored of the same old “desi” potato cutlets? Try this for a change!

4 medium potatoes
¼ cup milk
1 tbsp butter
1 tbsp olive oil
1 medium onion (diced)
8-10 oz baby spinach (fresh & raw)
3 cloves garlic (minced)
1 cup grated parmesan cheese
3 tbsp lemon juice
2 tsp green chilies (chopped)
½ tsp ground chilli flakes
Salt & pepper to taste
1 egg (slightly beaten)
2 cups crumbs (preferably Panko)
¼ cup coriander leaves (chopped – optional)
Directions
- Boil and mash potatoes.
- Add in milk and mix till creamy.
- Heat butter + olive oil in a skillet.
- Add onions and fry till translucent.
- Add garlic and spinach and fry till spinach wilts. Around 2 minutes.
- Season with salt and pepper.
- Add the mix to the potatoes. Add lemon juice and cheese. Mix well.
- Make patties and dip each individual patty first in egg then in crumbs.
- Heat oil in a skillet and fry the patties till golden.
