Ingredients

  • 1 cup plain flour

  • 1 tbsp sugar

  • 2 tsp baking powder

  • ¼ tsp salt

  • 1 egg

  • 1 cup milk

  • 2 tbsp oil

  • 1-2 drops vanilla essence

Directions

  • Combine all dry ingredients.
  • Make a well in the centre of the mixture.
  • In a separate bowl beat the egg. Add milk, oil and vanilla essence.
  • Pour the egg mix in the dry ingredients and mix well. The batter should be slightly lumpy. Let the batter rest for 15-20 minutes. This lets the baking powder do its thing.
  • With a ¼ cup measure pour batter into a lightly greased frying pan. Cook over medium heat for about 2 minutes on each side (or until golden brown).
