Ingredients

  • 1 cup plain flour

  • ½ cup butter

  • 1¼ cup + 2 tbsp granulated sugar

  • 1½ tsp baking powder

  • ½ tsp salt

  • 1 cup milk

  • 2 cups blackberries

Directions

  • Preheat oven to 175C.
  • In a medium bowl mix 1 cup sugar, flour, baking powder, and salt.
  • Add milk and mix.
  • Add melted butter and whisk until smooth.
  • Pour into the baking pan and scatter blackberries on top.
  • Sprinkle ¼ cup sugar on the top.
  • Bake until golden and crispy on the top (about 50-60 minutes).
  • When you have 10 minutes remaining in baking time; i.e. the topping is just starting to turn golden; sprinkle the remaining 2 tbsp sugar.
  • Serve warm with vanilla ice cream or whipped cream.
