Smoked Salmon & Veg Frittata

Ingredients

  • 4 eggs

  • ⅛ tsp red chilli powder

  • ⅓ cup milk

  • fresh dill (very little)

  • ¼ white onion (sliced)

  • ½ tomato (deseeded & cubed)

  • 1 tsp capers

  • 1 tbsp spring onion

  • 1-2 tbsp cheddar cheese

  • smoked salmon (cubed)

Directions

  • Prepare the egg mix by beating all ingredients together.
  • Heat a tap of oil in a small frying pan and sauté onions and tomatoes till the onions are translucent (but not brown) and the tomatoes skin bursts.
  • Add the capers and cook for 1-2 mins.
  • Even out the veggies in the base of the pan. Top with cheddar cheese and let it melt (leave the heat off).
  • Pour the egg mix over the veggies so that the veggies are all submerged.
  • Place salmon evenly in the egg mixture.
  • Bake in a preheated oven (200C) for 12-15 mins or until the eggs are cooked (your knife should come out clean).
