Almond & Chocolate Fudge

Easy, chewy, gooey no-bake chocolate fudge. A true 15 min recipe.

As the self-proclaimed queen of freezing all-the-things, I often make this as a big batch, roll up in logs, wrap in cling film and stick it in the freezer. Defrost in the fridge overnight and cut up into thick slices.

Ingredients

  • 1 packet Marie biscuits

  • 2 tbsp butter

  • 3 tbsp cocoa powder

  • 3 tsp sugar

  • 1 can condensed milk

  • ½ cup (150gm) almonds

Directions

  • Crush the biscuits. Leave some small chunks in there. Don’t make a fine powder.
  • Coarsely chop the almonds.
  • Melt the butter in a cooking pan on low heat.
  • On low heat, add sugar and cocoa stirring constantly until the sugar melts.
  • Add condensed milk and stir well.
  • Remove from heat and add the crushed biscuits and almonds a little at a time. Keep stirring to incorporate the dry mixture well. Do this quickly while the mixture is still warm. The mix will get firmer as it cools. Don’t worry. That’s how it’s supposed to be.
  • Using cling film (so the dough doesn’t stick to your hands), roll the fudge into a 1.5″ thick log.
  • Leave to cool and then cut into ½” slices.
