Cucumber Sandwiches are so easy to make and a great addition to an afternoon tea or brunch spread.
Cucumber Tea Sandwiches

1 cucumber
1 loaf of white or wholemeal bread
1 cup (250gm) cream cheese
4 tbsp mayonnaise
1 tsp fresh/dried chives
1 tsp fresh dill
¼ tsp garlic powder
salt and pepper to season
Directions
- Thinly slice cucumbers and place on a kitchen towel to drain out the excess moisture. I like to leave the skin on for the crunch and colour.
- Take out the cream cheese and mayonnaise in a bowl and using a spoon (or hand mixer) whip until smooth.
- Add in the dill, chives, garlic powder and stir to combine.
- Season with salt & pepper and set aside.
- Trim the bread (i.e. remove crusts).
- Spread a thin layer of the cream cheese mixture on both slices. Layer the cucumbers on one side and place the other slice on top.
- Repeat with the remaining slices.
- Cut each sandwich into 3 equal pieces to make finger sandwiches.
- Serve immediately or store in an airtight container for up to 2 days.
