Cucumber Tea Sandwiches

Cucumber Sandwiches are so easy to make and a great addition to an afternoon tea or brunch spread. 

Cucumber Tea Sandwiches

Ingredients

  • 1 cucumber

  • 1 loaf of white or wholemeal bread

  • 1 cup (250gm) cream cheese

  • 4 tbsp mayonnaise

  • 1 tsp fresh/dried chives

  • 1 tsp fresh dill

  • ¼ tsp garlic powder

  • salt and pepper to season

Directions

  • Thinly slice cucumbers and place on a kitchen towel to drain out the excess moisture. I like to leave the skin on for the crunch and colour.
  • Take out the cream cheese and mayonnaise in a bowl and using a spoon (or hand mixer) whip until smooth.
  • Add in the dill, chives, garlic powder and stir to combine.
  • Season with salt & pepper and set aside.
  • Trim the bread (i.e. remove crusts).
  • Spread a thin layer of the cream cheese mixture on both slices. Layer the cucumbers on one side and place the other slice on top.
  • Repeat with the remaining slices.
  • Cut each sandwich into 3 equal pieces to make finger sandwiches.
  • Serve immediately or store in an airtight container for up to 2 days.
