Roast Lamb Sandwich

½ cup leftover lamb/beef roast
½ onion (sliced)
2 brown mushrooms (sliced)
dijon mustard
mayonnaise
ketchup
sliced tomatoes
pickled jalapenos
lettuce
grated cheddar cheese
2 turkish rolls
Directions
- Preheat oven to 180C (oven + grill).
- Heat 1 tbsp oil in a medium frying pan and add the sliced onions and mushrooms.
- Saute until softened but not brown. Set aside
- Slice the Turkish rolls. Place the rolls in an oven-proof pan.
- On the bottom halves, evenly spread the caramelised onions & mushrooms. Top with shredded roast and cheddar cheese.
- Place the rolls in the oven and toast for 2-3 minutes (until the cheese has melted and slightly toasted.
- Top with jalapenos and your favourite vegetables. I like to sliced tomatoes and butter lettuce for some freshness.

- Add your favourite sauces. I like to use ketchup, Dijon mustard, and mayonnaise.
