Strawberry & Almond Crumble

½ kg strawberries (hulled & halved)
¼ cup caster sugar
2 tsp vanilla extract
2 tbsp + ⅓ cup flour
pinch of salt
¼ cup butter
¼ cup brown sugar
⅛ tsp cinnamon powder
¼ cup flaked almonds
⅓ cup oats
Directions
- Preheat oven to 180C.
- To prepare the filling, place the berries in a bowl and add caster sugar, vanilla extract, 2 tbsp flour, and a pinch of salt. Toss to coat evenly.

- To prepare the topping, mix together ⅓ cup flour, brown sugar, cinnamon powder, and a pinch of salt. Add cold butter and use a fork to even out until the texture starts to look like pea-sized balls. Add the almond flakes and oats and toss to combine.
- In a lined baking pan spread the berries evenly. Sprinkle the crumb mixture to coat.

- Bake for 40-45 minutes (until the top is crisp and golden and the mixture is bubbling).
- Let cool for 15 minutes at room temperature.

- Serve warm with fresh whipped cream.
